Daurade, or European sea bream, is a firm-fleshed saltwater fish with glistening silver skin, which is abundant in the North Atlantic, as well as in the Mediterranean. Daurade's sweet, juicy flesh and buttery taste makes it ideal for grilling, and is also featured prominently in Provencal dishes, such as Bouillabaisse. It's delicious grilled with thyme, rosemary, olive oil, and lemon. The ancient Greeks considered daurade sacred to Aphrodite, the goddess of love.
