Dayboat scallops, also referred to as dry scallops (meaning that they have not been dipped in a preserving solution), are truly something special. In season late fall through February, they come from the coast of New Jersey up through Maine. Dayboat scallops are harveted by a small fleet of boats that are limited by law to fishing only one day at a time, and returning to harbor within 24 hours of their departure.
