These steamers, soft shell clams from along the eastern U.S. seaboard, are the smallest of the Atlantic soft-shell variety. Because they tend to harbor sand in their partially opened shells, they should be thoroughly cleaned before cooking. They're delicious steamed, swished in broth for an extra cleaning, and dipped in butter, and are also good for batter-dipping and deep frying.
